The Winner: Grilled Veggie Sandwiches with Cilantro-Lime Spread
What says summer more than breaking out the grill? This plant-based option has a variety of seasonal vegetables that are paired with a creamy but bright citrus spread. And the fact that you can pull it all together in 20 minutes? Serious favorite potential.
Salmon spinach salad with gorgonzola
We weren’t sure about this combo until we tried it. Then we became believers. Savory, creamy, crunchy – this dish has it all. And with a good dose of omega-3s and under 15g of net carbs, it’s a great option for those watching carb intake.
This takes what can be a heavy classic dish and gives it a lighter, summery twist. With a dose of greens mixed with shredded parm and egg, it might even get kids to eat kale.
Spring vegetable avocado tartine
This might have been a stretch for summer, but we can’t have too many takes on avocado toast. We love the way this incorporates more veggies for a hearty breakfast or lunch.
Vibrant papaya salsa with multigrain chips
One of our favorite parts of summer is enjoying outdoor food with friends. This tomato-free salsa is the party-friendly dish to have in your back pocket when company is on the way. You can also pair it with a grilled protein for a main course!
