Our Top Dishes for Summer: PlateJoy Recipe Contest Winners

The votes are in: We’re excited to announce the winners of this year’s PlateJoy summer recipe contest!

We sent out a call for your favorite summer meals and you gave us a wealth of healthy options to pair with sandals, a shady patio and some summer slow jams. After a few weeks of testing, we came up with our favorites, and now you can try them out for yourself on PlateJoy! Bonus: None of them require an oven.

The Winner: Grilled Veggie Sandwiches with Cilantro-Lime Spread

Grilled veggie sandwiches with cilantro lime spread-1

What says summer more than breaking out the grill? This plant-based option has a variety of seasonal vegetables that are paired with a creamy but bright citrus spread. And the fact that you can pull it all together in 20 minutes? Serious favorite potential.

The Runners-Up:

Salmon spinach salad with gorgonzola

We weren’t sure about this combo until we tried it. Then we became believers. Savory, creamy, crunchy – this dish has it all. And with a good dose of omega-3s and under 15g of net carbs, it’s a great option for those watching carb intake.

Kale carbonara

This takes what can be a heavy classic dish and gives it a lighter, summery twist. With a dose of greens mixed with shredded parm and egg, it might even get kids to eat kale.

Spring vegetable avocado tartine

This might have been a stretch for summer, but we can’t have too many takes on avocado toast. We love the way this incorporates more veggies for a hearty breakfast or lunch.

Vibrant papaya salsa with multigrain chips

One of our favorite parts of summer is enjoying outdoor food with friends. This tomato-free salsa is the party-friendly dish to have in your back pocket when company is on the way. You can also pair it with a grilled protein for a main course!
